A date with dates 

"Sometimes, the uglier it is, the more delicious. This only applies to healthy-ish food, NOT your ex. 

I’m officially trademarking “ugly delicious” because the weirder the recipe seems, the yummier it is. While I don’t like categorising recipes as “healthy” because what’s healthy to you may not be to me, and gluten may be great for you but ruins me gut health. So you get what I mean, I hope.So this recipe isn’t healthy, but it’s definitely one that I’d eat for breakfast without a worry, or give to my kids if I had any. That wasn’t meant to rhyme, but oh well. This recipe was created out of a burning need to satiate that sweet toothDon’t be too worried if its too sticky, or too fudgey, it bakes beautifully. It’s meant to be a gooey, rich cake, not a soft delicate sponge like a chiffon. And when I tell you it’s granda friendly and kid friendly, I mean it!


THE RECIPE

120g Deseeded dates

170g Orange juice

60g Soy milk

2 tsp Apple cider vinegar

150g Oat flour

80g Almond flour

1/2 tsp Baking soda

1 tsp Baking powder 

45g Raw sugar (can replace with maple syrup)

30g cocoa powder

1 + 1/2 Tbsp Orange zest

50-80g Chopped nuts + Raisins + Chocolate chunks


THE METHOD

Preheat your oven to 160c for 20 mins. Soak the dates in the orange juice overnight
or for at least 6 hours, then blend into a paste. In a bowl mix soy milk and vinegar to make
vegan buttermilk. In another bowl add all the dry ingredients and mix well. Then add the remaining wet ingredients + the date paste together and combine with the dry.
add the chopped dry fruits and tranfer to an oiled and lined 7" cake tin.
Bake at 160c for 15-18 mins and eat at Room temp. Consume within 4 days.
